🌮🍕 Taco Bell–Style Mexican Pizza 🧀✨

Crispy tortillas layered with seasoned beef, refried beans, enchilada sauce, and melty cheese—just like the Taco Bell favorite, but homemade!

Ingredients

Beef Layer

1 lb ground beef

1 packet taco seasoning (or 2 tbsp homemade taco seasoning)

¼ cup water

Pizza Base

8 small flour tortillas (street-size or fajita-size)

Vegetable oil, for frying

Bean Layer

1½ cups refried beans (canned or homemade)

Sauce

1 cup enchilada sauce (mild or medium)

Cheese

1½ cups shredded Mexican blend cheese
(cheddar + mozzarella works too)

Toppings (Optional)

Diced tomatoes

Sliced black olives

Green onions

Sour cream (for serving)


Instructions

Step 1: Cook the Beef

  1. Heat a skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart.
  3. Drain excess grease.
  4. Add taco seasoning and water.
  5. Simmer for 3–5 minutes until thick and flavorful. Set aside.

Step 2: Fry the Tortillas

  1. Heat about ½ inch of oil in a pan over medium heat.
  2. Fry tortillas one at a time until golden and crispy (about 30–40 seconds per side).
  3. Drain on paper towels.

⚠️ They should be crispy like tostadas, not soft.


Step 3: Assemble the Mexican Pizzas

  1. Preheat oven to 400°F (200°C).
  2. Place one crispy tortilla on a baking sheet.
  3. Spread refried beans evenly on top.
  4. Add a layer of seasoned beef.
  5. Place a second tortilla on top.
  6. Spread enchilada sauce over the top tortilla.
  7. Sprinkle generously with shredded cheese.

Step 4: Bake

Bake for 8–10 minutes, until cheese is fully melted and bubbly.


Step 5: Add Toppings & Serve

Remove from oven.

Add tomatoes, olives, green onions if desired.

Slice into quarters like a pizza.

Serve hot with sour cream on the side.
