¾ yellow onion, diced
2 cups bell peppers, diced (red, yellow, and green)
1 tablespoon garlic, minced
2 teaspoons Italian seasoning blend
¾ teaspoon salt
½ teaspoon black pepper
3 tablespoons tomato paste
2 cups low-sodium beef broth
15 ounces crushed tomatoes
1 tablespoon Worcestershire sauce
1 cup jasmine rice
2 cups shredded Monterey jack cheese
1 tablespoon chopped fresh parsley, optional garnish

PREPARATION STEPS

1
In an extra-large skillet over medium-high heat, add the olive oil, ground beef, and ground mild Italian sausage
Cook until browned, about 6 to 7 minutes, then remove the cooked meat using a slotted spoon and set aside on a plate.
2
In the same skillet with the rendered fat, add the diced onion, bell peppers, minced garlic, Italian seasoning, salt, and black pepper
Saute for 5 to 6 minutes until vegetables are tender.
Stir in the tomato paste and cook for an additional minute.
Add the low-sodium beef broth, crushed tomatoes, Worcestershire sauce, and reserved cooked ground meat to the skillet. Stir to combine.
Bring the mixture to a boil, then add the jasmine rice. Stir to distribute the rice evenly.
Reduce the heat to low, cover the skillet with a tight-fitting lid, and cook for 20 to 22 minutes until the rice is tender.
Remove the lid and check that the rice is fully cooked. If needed, cook for an additional 2 to 3 minutes.
Sprinkle the shredded Monterey jack cheese over the top of the casserole. Cover with the lid and allow the cheese to melt.
