Slow Cooker Amish Corn Chowder
Ingredients
4 cups potatoes, peeled and diced
1 small onion, chopped
2 cups frozen corn (or canned corn, drained)
1 cup cooked ham or bacon, diced
4 cups chicken broth
1 cup heavy cream (or milk for a lighter version)
2 tablespoons butter
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika (optional)
Instructions
1️⃣ Add to Slow Cooker
Place potatoes, onion, corn, ham or bacon, chicken broth, butter, salt, pepper, and smoked paprika into the slow cooker.
2️⃣ Cook
Cover and cook on LOW for 6–7 hours or
HIGH for 3–4 hours,
until the potatoes are tender.
3️⃣ Make It Creamy
Stir in the heavy cream (or milk).
For a thicker chowder, mash some of the potatoes directly in the slow cooker or blend 1–2 cups and stir back in.
4️⃣ Final Simmer
Cover and cook for an additional 20–30 minutes on LOW.
🍽️ Serve
Serve hot with crusty bread or crackers.
