Ingredients

1 can (20 oz) crushed pineapple with juice

1 cup sweetened shredded coconut

½ cup brown sugar

½ cup chopped pecans or walnuts (optional)

1 box yellow cake mix

¾ cup (1½ sticks) butter, melted

Optional: ½ cup white chocolate chips

Optional Rum Glaze (adult version)

½ cup sweetened condensed milk

2–3 tablespoons coconut rum

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Spread crushed pineapple with its juice evenly in the dish.
  3. Sprinkle shredded coconut evenly over pineapple.
  4. Sprinkle brown sugar over the coconut.
  5. Add nuts and white chocolate chips if using.
  6. Sprinkle dry cake mix evenly over everything—do not stir.
  7. Drizzle melted butter evenly over the cake mix, covering as much as possible.
  8. Bake 40–45 minutes, until golden and bubbly.
  9. Let cool slightly before serving.

Optional Glaze:
Mix sweetened condensed milk with coconut rum and drizzle over warm cake.

Serving Ideas

Serve warm with vanilla ice cream or whipped cream

Add a maraschino cherry on top for full pina colada vibes 🍒

Sprinkle toasted coconut after baking for extra texture
