Mediterranean Baked Fish Delight
Ingredients
2 white fish fillets (cod, halibut, or tilapia)
2 tbsp olive oil
Zest and juice of 1 lemon
2 cloves garlic, minced
½ tsp dried oregano
½ tsp dried thyme or Italian seasoning
Salt and black pepper, to taste
½ cup cherry tomatoes, halved (optional)
¼ cup sliced olives (optional)
1 tbsp fresh parsley, chopped (for garnish)
Instructions
Preheat oven
Preheat oven to 200°C (400°F).
Prepare the fish
Place fish fillets in a lightly greased baking dish.
Drizzle with olive oil, lemon juice, and sprinkle with lemon zest.
Add garlic, oregano, thyme, salt, and pepper.
Add Mediterranean touches (optional)
Scatter cherry tomatoes and olives around and over the fish.
Bake
Bake uncovered for 12–15 minutes, or until the fish flakes easily with a fork.
Serve
Garnish with fresh parsley and serve immediately.
Serving Ideas
Serve with rice, roasted potatoes, or couscous
Pair with a fresh salad or steamed vegetables
