Marinated Greek Lamb Chops with Mushrooms & Tomatoes
Ingredients
Lamb & Marinade
4 lamb chops (about 1 inch thick)
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon lemon zest
3 garlic cloves, minced
1 teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon paprika
Salt and black pepper, to taste
Vegetables
1 cup mushrooms, sliced
1 cup cherry tomatoes, halved
1 small red onion, sliced (optional)
For Cooking & Garnish
1 tablespoon olive oil or butter
Fresh parsley or oregano, chopped
Instructions
Marinate the lamb
In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and pepper.
Rub the marinade over the lamb chops. Cover and marinate for at least 30 minutes (up to 4 hours for best flavor).
Cook the lamb chops
Heat a skillet or grill pan over medium-high heat. Add a little olive oil.
Cook lamb chops for 3–4 minutes per side for medium-rare, or longer to your preferred doneness.
Remove and let rest.
Sauté the vegetables
In the same pan, add mushrooms and cook for 3–4 minutes until browned.
Add cherry tomatoes (and onion if using) and cook 2–3 minutes until softened.
Serve
Plate the lamb chops with mushrooms and tomatoes.
Garnish with fresh parsley or oregano and a squeeze of lemon if desired.

Serve with Greek potatoes, rice, or warm pita bread
