Ingredients:

  • 1 1/2 cups graham cracker crumbs

  • 6 tablespoons unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Lime zest for garnish

Directions:

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture holds together when pressed, similar to wet sand.
  2. Firmly press the crumb mixture into the bottoms and up the sides of mini tart pans or a muffin tin lined with paper liners. Ensure the crusts are even and compact.
  3. Chill the crusts in the refrigerator for at least 15 minutes to set, allowing them to achieve a firm texture.
  4. In a separate bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest until smooth and well combined, which should take about a minute.
  5. Pour the lime filling into the chilled crusts, filling each mini pie almost to the top. Be careful not to overfill; leave a little space for garnishing later.
  6. Refrigerate the pies for at least 2 hours to allow the filling to firm up beautifully, as this chill time is crucial for the right texture.
  7. While the pies are chilling, beat the heavy cream and powdered sugar together in a mixing bowl until stiff peaks form for your lovely whipped cream topping.
  8. Before serving, garnish each mini pie with a dollop of whipped cream and a sprinkle of lime zest for a fresh, vibrant touch.
