Ingredients:
1 tablespoon olive oil
1 pound lean ground beef (or ground turkey)
1 small red onion, diced
2 garlic cloves, minced
3 carrots, peeled and sliced
3 celery stalks, chopped
1/2 head of green cabbage, chopped
1 can (14.5 oz) diced tomatoes
6 cups low-sodium beef broth (or vegetable broth)
1 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt (adjust to taste)
1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions:
Brown the Meat
Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
Sauté Aromatics
Add diced onion and garlic to the pot. Cook for 2–3 minutes until fragrant.
Add Vegetables
Stir in carrots, celery, and cabbage. Cook for another 5–7 minutes until slightly softened.
Simmer the Soup
Add diced tomatoes, broth, thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for 25–30 minutes until all vegetables are tender.
Serve Hot
Ladle into bowls, garnish with fresh parsley if desired, and enjoy.
