INGREDIENTS

¾ cup granulated sugar
¼ cup water
1 (8-ounce) package cream cheese, softened
2 tablespoons granulated sugar
5 large eggs
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) can evaporated milk
2 teaspoons vanilla extract

PREPARATION STEPS

Caramel Topping:

In a heavy saucepan, cook the granulated sugar and water over medium heat until melted and boiling
Continue cooking until the mixture turns amber in color, then remove from heat and pour into an ungreased 9-inch x 2-inch high cake pan or a 2-quart baking dish.
Custard:

Preheat the oven to 350°F (175°C)
In the bowl of a mixer, beat the cream cheese until smooth
Add eggs one at a time, mixing well after each addition
Scrape down the sides of the bowl as needed to ensure a smooth mixture.
Add remaining ingredients (granulated sugar, sweetened condensed milk, evaporated milk, and vanilla extract) to the cream cheese mixture and beat until smooth.
Pour the custard mixture over the caramel topping in the pan.
Place the pan in a larger baking dish or roasting pan with high sides. Pour boiling water into the larger pan until it reaches about 1 inch deep.
Bake for 50-60 minutes or until the center of the flan is still slightly jiggly.
Remove from the oven and from the water bath. Allow the flan to cool for about an hour, then cover and refrigerate overnight.

When ready to serve, place the pan in hot water for about a minute to loosen the caramel
