Easy Queso Chicken Enchiladas 🧀🐔🌯

Creamy, cheesy enchiladas filled with tender chicken, mild green chilies, and rich queso—perfect for a cozy weeknight dinner.

Ingredients (Yields 5 Servings)

Tortillas & Filling

5 burrito-size flour tortillas

2½ cups cooked chicken, shredded (rotisserie works great)

1½ cups shredded cheddar cheese (or Mexican blend)

½ cup sour cream

1 (4 oz) can mild green chilies, drained

½ tsp garlic powder

½ tsp onion powder

Salt & black pepper, to taste

Queso Sauce

1½ cups queso dip (store-bought or homemade)

½ cup milk (to thin, if needed)

Topping (Optional)

Extra shredded cheese

Chopped green onions or cilantro


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Make the filling:
    In a large bowl, combine shredded chicken, cheddar cheese, sour cream, green chilies, garlic powder, onion powder, salt, and pepper. Mix until creamy and well combined.
  3. Assemble enchiladas:
    Spoon the chicken mixture evenly down the center of each tortilla. Roll tightly and place seam-side down in the baking dish.
  4. Prepare the queso sauce:
    Warm the queso in a saucepan or microwave. Stir in milk until smooth and pourable
