🥦🧀 Easy Crockpot Broccoli Cheddar Soup 🍲
Rich, creamy soup made right in the slow cooker

Cook: 4–6 hours (LOW) or 2–3 hours (HIGH)
🍽️ Serves

🛒 Ingredients
4 cups diced potatoes
2 cups chopped broccoli (fresh or frozen)
1 small onion, finely diced
2 cloves garlic, minced
3 cups chicken or vegetable broth
1 cup heavy cream
2 cups shredded sharp cheddar cheese
2 tbsp butter
2 tbsp all-purpose flour (for thickness)
1 tsp salt (or to taste)
½ tsp black pepper
Optional: pinch of paprika or mustard powder
👩‍🍳 Instructions
1️⃣ Add to Crockpot
Add potatoes, broccoli, onion, garlic, and broth to the slow cooker.
Cover and cook on LOW 4–6 hours or HIGH 2–3 hours, until potatoes are tender.
2️⃣ Thicken the Soup
Melt butter in a small pan.
Stir in flour and cook 1 minute.
Add this mixture to the crockpot and stir well.
3️⃣ Make It Creamy
Stir in heavy cream.
Cover and cook 15–20 minutes more.
4️⃣ Add Cheese
Reduce heat to LOW.
Gradually stir in cheddar cheese until melted and smooth.
(Don’t boil after adding cheese.)
5️⃣ Blend (Optional)
Use an immersion blender for a smoother soup, or leave chunky.

🥕 Add carrots for extra color
🥓 Stir in cooked bacon bits
🧄 Add garlic powder for deeper flavor
🥛 Use half-and-half for a lighter version
