Creamy Stuffed Mashed Potato Patties with Savory Beef Core

Ingredients:

4 cups mashed potatoes (chilled and firm)

1 cup all-purpose flour

1 egg

Salt and pepper to taste

1/2 lb ground beef

1 small onion, finely chopped

2 garlic cloves, minced

1/4 tsp paprika

1 tbsp olive oil

2 tbsp fresh parsley, chopped

1/2 cup shredded mozzarella (optional)

Oil for frying

Directions:

In a skillet over medium heat, add olive oil. Sauté onions until translucent, then add garlic.

Add ground beef, salt, pepper, and paprika. Cook until browned and no longer pink. Stir in parsley and let cool slightly.

In a bowl, mix mashed potatoes, flour, egg, salt, and pepper until a soft dough forms.

Take a handful of dough and flatten into a round disk. Place a spoonful of meat filling (and mozzarella if using) in the center. Cover with another layer of dough and seal the edges.

Heat oil in a pan over medium heat. Fry pancakes on each side until golden brown and crispy, about 3–4 minutes per side.

Place on paper towels to drain excess oil. Serve warm with sour cream or yogurt on the side.
