🧁 Cotton Cupcakes – Full Recipe
Ingredients
2 eggs (room temperature)
120 g granulated sugar (½ cup + 2 Tbsp)
120 g all-purpose flour (1 cup)
4 g baking powder (1 tsp)
80 g unsalted butter (⅓ cup)
60 ml milk (¼ cup)
2 tsp vanilla extract
Instructions
- Preheat your oven to 170°C (340°F) and line a muffin tray with cupcake liners.
- Melt the butter and warm the milk slightly. Set aside.
- In a mixing bowl, whisk the eggs and sugar until the mixture becomes pale, thick, and doubled in volume (about 3–5 minutes using an electric mixer).
- Add the vanilla extract and mix lightly.
- Sift the flour and baking powder, then gently fold them into the egg mixture using a spatula.
- Add the warm milk and melted butter gradually while folding gently until everything is well combined.
- Fill the cupcake liners ¾ full.
- Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
- Let cool completely on a wire rack. Enjoy the light, soft “cotton-like” texture! 🤍🧁
