🧁 Cotton Cupcakes – Full Recipe

Ingredients

2 eggs (room temperature)

120 g granulated sugar (½ cup + 2 Tbsp)

120 g all-purpose flour (1 cup)

4 g baking powder (1 tsp)

80 g unsalted butter (⅓ cup)

60 ml milk (¼ cup)

2 tsp vanilla extract


Instructions

  1. Preheat your oven to 170°C (340°F) and line a muffin tray with cupcake liners.
  2. Melt the butter and warm the milk slightly. Set aside.
  3. In a mixing bowl, whisk the eggs and sugar until the mixture becomes pale, thick, and doubled in volume (about 3–5 minutes using an electric mixer).
  4. Add the vanilla extract and mix lightly.
  5. Sift the flour and baking powder, then gently fold them into the egg mixture using a spatula.
  6. Add the warm milk and melted butter gradually while folding gently until everything is well combined.
  7. Fill the cupcake liners ¾ full.
  8. Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  9. Let cool completely on a wire rack. Enjoy the light, soft “cotton-like” texture! 🤍🧁
