🍒 “Christmas Cake with Fruit and Cognac: A British Classic for Your Holidays” 🍷

🛒 Ingredients:

Fruits:
300g of dried plums
100 g of dried cranberries (or currants)
50 g of dried cherries
125 g mixed fruits (walnuts, raisins, etc. )
400 ml of cognac, rum or whiskey (more to wash the cake)
Masa:
150 g butter at room temperature
100g of dark brown sugar
Zest of half a lemon
2 eggs
1 tablespoon of black treacle or molasses
150 g of wheat flour
1/4 teaspoon of ground ginger
1/2 tsp ground cinnamon
1 pinch of ground clove
75 g of ground almond
75 g of chopped walnuts
⏱️ Total time: 2 hours and 30 minutes
🍴 Servings: 12

📝 Instructions:

1️⃣ The night before:

Boil the nuts in the alcohol of choice for a few minutes. Let it cool and rest overnight to soak up the flavors.
2️⃣ Preheat and prepare the mold:

Preheat the oven to 150 ° C. Grease a large elongated mold, fill it with baking paper leaving an excess of 8 cm on the top and re-grease the paper.
3️⃣ Prepare the dough:

Beat the butter with brown sugar until you get a creamy mixture. Add the zest of lemon, eggs one by one and the molasses.
4️⃣ Incorporate the dries:

Sift the flour with spices and ground almond. Add it little by little to the mix, alternating with soaked fruits. Finally, incorporate the chopped nuts.
5️⃣ Bakes:

Pour the dough into the mold and bake for 2 hours, covering with excess paper. Check in with a chopstick from hour and a half.
6️⃣ Bath and Canning:

When taking out of the oven, paint the cake with more alcohol and wrap it in tin foil while it’s still hot. Once cold, store it in an airtight container, bathing it with alcohol every few days to intensify the flavors
