🍫 Chocolate Coconut Dream Cake 🥥
Ingredients
For the Cake:
1 box (approx. 15.25 oz) chocolate cake mix
3 large eggs
1/2 cup vegetable oil
1 cup water
For the Coconut Filling:
1 can (14 oz) sweetened condensed milk
1 1/2 cups sweetened shredded coconut
1/2 cup powdered sugar
For the Chocolate Ganache:
1 cup heavy whipping cream
1 1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla extract
Optional Garnish:
Extra shredded coconut or chocolate shavings
Instructions
Bake the Cake: Preheat oven to 350°F. Grease a 9×13-inch baking pan. Prepare the cake batter according to the package directions using the eggs, oil, and water. Pour into the pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the Coconut Filling: While the cake bakes, stir together the sweetened condensed milk, shredded coconut, and powdered sugar in a medium bowl. The mixture will be very thick and sticky.
Add the Filling: As soon as the cake comes out of the oven, let it cool for just 10 minutes (it should still be warm). Carefully spread the coconut filling evenly over the entire surface of the warm cake.
Make the Ganache: Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer (small bubbles around the edges). Immediately pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit undisturbed for 2 minutes, then stir gently until completely smooth and glossy. Stir in the vanilla extract.
Top with Ganache & Chill: While still warm and pourable, pour the chocolate ganache over the coconut layer, spreading it to the edges with a spatula. If desired, sprinkle with extra coconut. Refrigerate the cake for at least 1 hour, or until the ganache is fully set, before slicing and serving.
