Cheesy Beef Quesadillas
Ingredients
1 shallot, finely chopped
1 tbsp olive oil
450 g (1 lb) extra-lean ground beef
2 cloves garlic, minced
1 tsp paprika
1 tsp cumin
½ tsp chili powder (optional)
Salt & black pepper, to taste
1 cup shredded cheese (cheddar, mozzarella, Monterey Jack, or a mix)
6–8 flour tortillas
1 tbsp butter or extra oil (for cooking)
Optional add-ins
Chopped bell peppers
Sweet corn
Jalapeños
Fresh parsley or cilantro
Instructions
Cook the beef
Heat olive oil in a skillet over medium heat. Add the chopped shallot and sauté for 2–3 minutes until soft.
Add garlic and cook 30 seconds.
Season
Add ground beef. Break it up and cook until browned.
Season with paprika, cumin, chili powder, salt, and pepper.
Cook until no liquid remains. Remove from heat.
Assemble quesadillas
Lay a tortilla flat. Sprinkle cheese on one half, add beef mixture, then more cheese.
Fold the tortilla in half.
Cook
Heat a pan over medium heat with a little butter or oil.
Cook each quesadilla 2–3 minutes per side until golden and crispy and cheese is melted.
Serve
Slice into wedges and serve hot.
