Cheeseburger Quesadillas

📝 Ingredients
1 lb (450 g) ground beef (80/20 works best)
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika (optional)
1½ cups shredded mozzarella cheese
1 cup shredded cheddar cheese (or use all cheddar)
2 tbsp cream cheese (optional, extra creamy)
Dill pickle slices (optional but very “cheeseburger”!)
Sugar-free ketchup & mustard (optional, keto-friendly)
🔥 Instructions
Cook the beef
In a skillet over medium heat, cook the ground beef until browned.
Drain excess fat, then season with salt, pepper, garlic powder, onion powder, and paprika. Set aside.
Make the cheese “tortillas”
Heat a non-stick pan over medium-low heat.
Sprinkle about ½ cup shredded cheese into a circle (mix mozzarella + cheddar).
Let it melt and bubble until the edges are golden and crisp (about 2–3 minutes).
Add the filling
On one half of the cheese circle, add:
Cooked beef
A few pickle slices
Small dots of cream cheese (optional)
Drizzle of keto ketchup/mustard (optional)
Fold & crisp
Carefully fold the cheese over to form a quesadilla.
Cook another 1–2 minutes per side until crispy and golden.
Repeat
Repeat with remaining cheese and filling.
🍽️ Serving Ideas
Serve with sugar-free burger sauce
Add shredded lettuce on the side
Cut into wedges for parties (they disappear FAST!)
