Buckeyes
Ingredients:
- 1 cup peanut butter
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 2 cups chocolate chips
- 2 tablespoons vegetable shortening
Directions:
- In a mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Mix until the mixture is smooth and well-combined.
- Gradually add the powdered sugar to the bowl, stirring continuously until the mixture is well-combined and no lumps remain.
- Take small portions of the mixture and roll them into balls, placing each ball on a baking sheet lined with parchment paper. Ensure the balls are evenly spaced.
- Once all the balls have been formed, place the baking sheet in the freezer for approximately 30 minutes to allow the balls to firm up and hold their shape.
- While the balls are firming up, prepare the chocolate coating. In a microwave-safe bowl, melt the chocolate chips along with the vegetable shortening. Stir the mixture until it is completely smooth and free of lumps.
- Carefully dip each peanut butter ball into the melted chocolate, ensuring it is covered completely. Use a fork or a dipping tool to lift the ball out and allow any excess chocolate to drip back into the bowl.
- Return the chocolate-covered peanut butter balls to the lined baking sheet. Repeat the dipping process for each ball until all are coated.
- Allow the coated balls to set at room temperature or place them in the refrigerator until the chocolate hardens completely.
