INGREDIENTS

For the Egg Rolls:
1 pound ground sirloin (I use 91/9)
2 teaspoons diced onion
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons yellow mustard
2 tablespoons ketchup
1 teaspoon Worcestershire sauce
12 egg roll wrappers
12 slices American cheese
½ cup chopped dill pickles
Olive oil spray or avocado spray
1 teaspoon sesame seeds
For the Special Dipping Sauce:
½ cup mayonnaise
2 tablespoons yellow mustard
1 ½ tablespoons ketchup
½ tablespoon apple cider vinegar
¼ teaspoon paprika

PREPARATION STEPS

In a large skillet over medium-high heat, add the ground beef and onion. Season with salt and pepper, breaking apart as it cooks until fully browned and no longer pink.
Once cooked, turn off the heat and drain any grease, if necessary.
Add in the mustard, ketchup, and Worcestershire sauce. Stir to fully combine and set aside to cool for approximately 5 minutes.
To a clean flat surface, lay out an egg roll wrapper into a diamond shape and place a small bowl of water nearby.
Lay a slice of cheese in the center. Top with approximately 2 tablespoons of the beef mixture and a sprinkle of the chopped pickles.
Dip a finger into the water and wet the edge of the wrapper.
Fold the bottom of the diamond up, tuck in both ends, and roll up tightly. Place seam side down on a plate as you assemble the rest of the egg rolls.
Working in batches, place 4-5 egg rolls into the basket of the air fryer. Do not overcrowd. Spray them with avocado oil and cook for 6 minutes at 390°F.
Use tongs to flip, spray again with more avocado oil, sprinkle with sesame seeds, and cook for another 4 minutes or until golden.
To Make the Sauce:
To a small bowl, whisk together the mayo, mustard, ketchup, apple cider vinegar, and paprika.
