Bacon-Crusted Swiss Mushroom Stuffed Meatloaf

Ingredients:

2 lbs ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
For the Filling:
1 cup mushrooms, finely chopped
1 cup Swiss cheese, shredded
1 tablespoon olive oil
1/2 teaspoon thyme
Salt and pepper to taste
For the Bacon Crust:
8–10 slices of bacon

Directions:

Preheat oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Sauté mushrooms, thyme, salt, and pepper until soft. Remove from heat and let cool.

In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, egg, salt, pepper, and Worcestershire sauce. Mix gently but thoroughly.

On a clean surface, shape half of the meat mixture into a loaf.

Spread the sautéed mushrooms evenly over the meat, then sprinkle the shredded Swiss cheese on top.

Cover with remaining meat mixture and seal edges to enclose the filling.

Place the meatloaf on a lined baking sheet or in a loaf pan. Lay bacon slices across the top, tucking the ends underneath the loaf.

Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C). Let rest 10 minutes before slicing.
