Broccoli & Cheese Stuffed Chicken
Juicy chicken breasts filled with a creamy broccoli–cheddar mixture, then baked until golden and melty. A simple but impressive meal!
Ingredients
For the Chicken
4 chicken breasts
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp paprika (optional)
1 tbsp olive oil
For the Filling
3/4 cup chopped broccoli (fresh or steamed)
1/2 cup shredded cheddar cheese
2 tbsp softened cream cheese
1 tbsp mayonnaise or sour cream (optional, for extra creaminess)
Salt & pepper, to taste
Instructions
- Prepare the Filling
- In a small bowl, mix together:
chopped broccoli
cheddar cheese
cream cheese
(optional) mayo or sour cream
salt & pepper
- Stir until the mixture is fully combined and creamy.
- Prepare the Chicken
- Preheat oven to 400°F (200°C).
- Pat chicken breasts dry.
- Using a sharp knife, cut a pocket into the side of each chicken breast (do not cut all the way through).
- Season the outside of the chicken with salt, pepper, garlic powder, and paprika.
- Stuff each pocket with the broccoli–cheese mixture.
- Secure with toothpicks if needed.
- Sear the Chicken (Optional but recommended)
- Heat 1 tbsp olive oil in a skillet over medium-high heat.
- Sear chicken breasts for 2–3 minutes per side, until lightly golden.
- Bake
- Transfer chicken to a baking dish (or keep in the oven-safe skillet).
- Bake for 20–25 minutes, depending on size, until chicken is cooked through (internal temp 165°F / 74°C).
- Serve
Let rest for 5 minutes, remove toothpicks, and serve with:
Rice
Mashed potatoes
Roasted veggies
Green salad
