Strawberry Cheesecake Cookies 🍓

Soft strawberry cookies made from cake mix and stuffed with a sweet cream cheese filling. Quick, delicious, and perfect for any occasion!


Ingredients

For the Cookie Dough

1 box (15.25 oz) strawberry cake mix

1/3 cup vegetable oil

2 large eggs

For the Cheesecake Filling

4 oz cream cheese, softened

2 tbsp powdered sugar

1/2 tsp vanilla extract

Optional Toppings

Fresh strawberry pieces

White chocolate chips

Powdered sugar for dusting


Instructions

  1. Make the Cheesecake Filling
  2. In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth.
  3. Scoop small teaspoons of the mixture onto a plate and place in the freezer for 20–30 minutes to firm up.

  1. Prepare the Cookie Dough
  2. In a large bowl, combine the cake mix, vegetable oil, and eggs.
  3. Stir until a thick dough forms.
  4. Chill the dough in the fridge for 15–20 minutes to make it easier to handle.

  1. Assemble the Cookies
  2. Scoop about 1 tablespoon of cookie dough, flatten it slightly in your hand.
  3. Place a frozen cream cheese ball in the center.
  4. Cover with another small piece of dough, sealing the edges completely.
  5. Place on a parchment-lined baking sheet.

  1. Bake
  2. Preheat oven to 350°F (175°C).
  3. Bake cookies for 10–12 minutes, until the edges are set but the centers still look soft.
  4. Let cool on the tray for 5 minutes before transferring to a rack.

  1. Serve

Enjoy warm for a gooey cheesecake center or chilled for a firmer filling.
Dust with powdered sugar or drizzle with melted white chocolate if you like!
