Strawberry Cheesecake Cookies 🍓
Soft strawberry cookies made from cake mix and stuffed with a sweet cream cheese filling. Quick, delicious, and perfect for any occasion!
Ingredients
For the Cookie Dough
1 box (15.25 oz) strawberry cake mix
1/3 cup vegetable oil
2 large eggs
For the Cheesecake Filling
4 oz cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
Optional Toppings
Fresh strawberry pieces
White chocolate chips
Powdered sugar for dusting
Instructions
- Make the Cheesecake Filling
- In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth.
- Scoop small teaspoons of the mixture onto a plate and place in the freezer for 20–30 minutes to firm up.
- Prepare the Cookie Dough
- In a large bowl, combine the cake mix, vegetable oil, and eggs.
- Stir until a thick dough forms.
- Chill the dough in the fridge for 15–20 minutes to make it easier to handle.
- Assemble the Cookies
- Scoop about 1 tablespoon of cookie dough, flatten it slightly in your hand.
- Place a frozen cream cheese ball in the center.
- Cover with another small piece of dough, sealing the edges completely.
- Place on a parchment-lined baking sheet.
- Bake
- Preheat oven to 350°F (175°C).
- Bake cookies for 10–12 minutes, until the edges are set but the centers still look soft.
- Let cool on the tray for 5 minutes before transferring to a rack.
- Serve
Enjoy warm for a gooey cheesecake center or chilled for a firmer filling.
Dust with powdered sugar or drizzle with melted white chocolate if you like!
