Christmas Log with Fruits and Mascarpone

Ingredients:

4 large eggs
¾ cup granulated sugar
1 cup all-purpose flour
1 tsp vanilla extract
1 tsp baking powder
¼ tsp salt
For the Mascarpone Filling:
1 ½ cups mascarpone
1 cup heavy cream
1 tsp vanilla extract
Zest of 1 orange
For the Fruit Mix:
1 cup strawberries, diced
½ cup kiwi, diced
½ cup blueberries
2 tbsp honey
For Topping:
Powdered sugar
Mixed berries
Orange zest
Fresh mint

Directions:

Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.

In a large mixing bowl, beat eggs and sugar until pale, thick, and doubled in volume (about 5 minutes).

Add vanilla extract, then gently fold in flour, baking powder, and salt until no streaks remain.

Spread the batter evenly onto the baking tray and bake for 10–12 minutes until lightly golden.

Lay a clean kitchen towel on the counter and sprinkle with powdered sugar.

Immediately invert the warm cake onto the towel, peel off parchment, and roll the cake gently with the towel. Let cool completely.

For the mascarpone filling, whip heavy cream until soft peaks form. Add mascarpone, powdered sugar, vanilla, and orange zest and whip until smooth and fluffy.

In a bowl, gently combine fruits with honey.

Unroll the cooled sponge and spread an even layer of mascarpone filling, then spoon fruit mixture over it.

Roll the cake back up tightly, seam-side down.

Dust with powdered sugar, garnish with berries, and chill for 1 hour before serving.
