Hawaiian Pineapple Coconut Delight 🍍🥥✨
A creamy, tropical, crowd-pleasing dessert—shared by a Hawaiian friend and now a house favorite!
Ingredients:
1 can (20 oz) crushed pineapple, drained
(reserve 2 tbsp of the juice)
1 package (3.4 oz) instant vanilla pudding mix
1 cup cold milk
1 cup shredded coconut (sweetened or unsweetened)
1 cup whipped topping (like Cool Whip), thawed
1/2 cup chopped macadamia nuts
(or pecans, walnuts, or almonds—your choice!)
Instructions:
- In a mixing bowl, combine the pudding mix with the cold milk and whisk until it begins to thicken.
- Add the crushed pineapple along with the 2 tablespoons of reserved juice.
- Stir in the shredded coconut and whipped topping until smooth and fluffy.
- Fold in the chopped macadamia nuts (or your preferred nuts).
- Cover the bowl and chill for 1–2 hours to allow the flavors to blend and the mixture to firm up.
- Serve with Graham crackers, cookies, or enjoy it as a spoon dessert!
