Hawaiian Pineapple Coconut Delight 🍍🥥✨

A creamy, tropical, crowd-pleasing dessert—shared by a Hawaiian friend and now a house favorite!

Ingredients:

1 can (20 oz) crushed pineapple, drained
(reserve 2 tbsp of the juice)

1 package (3.4 oz) instant vanilla pudding mix

1 cup cold milk

1 cup shredded coconut (sweetened or unsweetened)

1 cup whipped topping (like Cool Whip), thawed

1/2 cup chopped macadamia nuts
(or pecans, walnuts, or almonds—your choice!)


Instructions:

  1. In a mixing bowl, combine the pudding mix with the cold milk and whisk until it begins to thicken.
  2. Add the crushed pineapple along with the 2 tablespoons of reserved juice.
  3. Stir in the shredded coconut and whipped topping until smooth and fluffy.
  4. Fold in the chopped macadamia nuts (or your preferred nuts).
  5. Cover the bowl and chill for 1–2 hours to allow the flavors to blend and the mixture to firm up.
  6. Serve with Graham crackers, cookies, or enjoy it as a spoon dessert!
