Strawberry Cheesecake Donuts

Ingredients:

2 cups all-purpose flour
¼ cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon vanilla extract
¾ cup milk
1 large egg
3 tablespoons melted butter
Oil for frying
For the Strawberry Filling:
1 cup strawberries, chopped
2 tablespoons sugar
1 tablespoon lemon juice
For the Cheesecake Glaze:
4 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2–3 tablespoons milk

Directions:

In a bowl, whisk together flour, sugar, baking powder, and salt.

In another bowl, whisk milk, egg, vanilla, and melted butter.

Combine wet and dry ingredients until a soft dough forms.

Roll dough on a lightly floured surface to ½-inch thickness. Cut into donut rounds.

Heat oil in a pot to 350°F (175°C). Fry donuts 1–2 minutes per side until golden. Drain on paper towels.

In a small pan, cook strawberries, sugar, and lemon juice for 5–7 minutes until thick. Let cool.

Mix cream cheese, powdered sugar, vanilla, and milk to create a smooth glaze.

Fill a piping bag with strawberry filling. Inject filling into each donut.

Dip tops of donuts into cheesecake glaze and let set for a few minutes before serving.
