Foolproof Homemade Pizza Dough (For 2 Medium Pizzas)
Soft, stretchy, easy to work with, and perfect for any toppings!
Ingredients (for 2 medium pizzas)
2½ cups bread flour (320g)
1⅓ cups cake flour (160g)
1½ teaspoons salt
1 tablespoon sugar
2¼ teaspoons active dry yeast (1 packet)
1⅓ cups warm water (315 ml, about 45°C / 110°F)
2 tablespoons olive oil
Instructions
- Activate the Yeast
- In a bowl, combine warm water, sugar, and yeast.
- Stir gently and let sit for 5–10 minutes until foamy.
(If it doesn’t foam, the yeast is inactive—start again.)
- Make the Dough
- In a large mixing bowl, whisk together bread flour, cake flour, and salt.
- Make a well in the center and pour in the activated yeast mixture and olive oil.
- Mix with a spoon until a shaggy dough forms.
- Transfer to a floured surface and knead for 8–10 minutes, until smooth and elastic.
- First Rise
- Shape the dough into a ball and place in a lightly oiled bowl.
- Cover with plastic wrap or a kitchen towel.
- Let rise for 1 to 1½ hours, or until doubled in size.
- Divide & Shape
- Punch down the dough gently to release air.
- Divide into 2 equal balls.
- Cover and rest for 10 minutes (helps the dough relax).
- Stretch each dough ball into a 10–12 inch pizza crust.
Use your hands, not a rolling pin, to keep it airy.
- Assemble
Add your favorite toppings:
Pizza sauce
Mozzarella
Pepperoni
Veggies
Fresh basil

- Bake
- Preheat your oven to 250°C (475°F) or as hot as possible.
- Heat a pizza stone or baking tray inside.
- Bake each pizza for 10–12 minutes, or until the crust is golden and the cheese is bubbly.
- Serve
