Cheesy Pizza-Style Beef Enchiladas
A fun, comforting mashup of Italian and Mexican flavors—soft tortillas rolled with savory beef, smothered in pizza sauce, topped with melty cheese, and baked to perfection.
Ingredients
For the Beef Filling
1 lb (450 g) ground beef
1 cup diced yellow onion
3 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon dried oregano
½ teaspoon paprika
Salt and black pepper to taste
1 cup pizza sauce (plus more for topping)
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
For Assembling the Enchiladas
8–10 medium flour tortillas
1 ½ cups pizza sauce (for topping)
2 cups shredded mozzarella cheese
¼ cup grated Parmesan
Optional toppings:
Sliced pepperoni
Black olives
Green bell pepper slices
Fresh basil
Red pepper flakes
Instructions
- Prepare the Beef Pizza Filling
- In a large skillet, cook the ground beef over medium heat until browned.
- Add the diced onion and cook until softened, about 4–5 minutes.
- Stir in the garlic and cook for 30 seconds.
- Season with Italian seasoning, oregano, paprika, salt, and pepper.
- Add 1 cup of pizza sauce and reduce heat.
- Stir in 1 cup mozzarella and ¼ cup Parmesan.
- Cook until the cheese melts and the mixture thickens slightly.
- Remove from heat and let cool slightly.
- Assemble the Enchiladas
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of pizza sauce on the bottom of a baking dish.
- Lay a tortilla flat, scoop in 2–3 tablespoons of beef mixture, and roll tightly.
- Place seam-side down in the baking dish.
- Repeat with all tortillas.
- Add the Pizza Topping
- Pour the remaining pizza sauce evenly over the rolled enchiladas.
- Sprinkle with 2 cups shredded mozzarella and Parmesan.
