Santa’s no bake sugar cookie bars

Ingredients

1 cup unsalted butter, melted

1 cup granulated sugar

1 cup powdered sugar

2 teaspoons vanilla extract

1/4 teaspoon almond extract (optional but adds classic sugar-cookie flavor)

1/4 teaspoon salt

3 cups crushed vanilla wafer cookies (or shortbread cookies)

1/2 cup festive sprinkles (plus extra for topping)

1 cup white chocolate chips (for topping)

1 tablespoon vegetable oil (for smoothing melted chocolate)

Preparation Method

Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.

In a large bowl, whisk together the melted butter, granulated sugar, powdered sugar, vanilla extract, almond extract (if using), and salt until smooth.

Add the crushed vanilla wafers and sprinkles. Stir until the mixture is evenly combined and forms a soft dough-like texture.

Transfer the mixture into the prepared pan. Press it down firmly and evenly using a spatula or the back of a spoon.

Melt the white chocolate chips with the vegetable oil in the microwave in 20-second intervals, stirring between each until smooth.

Pour the melted white chocolate over the cookie mixture and spread it into an even layer.

Add additional sprinkles on top.

Refrigerate for at least 2 to 3 hours, or until fully set.

Once firm, lift from the pan and cut into bars.

Tips

Crush the cookies as fine or as chunky as you like; finer crumbs create a smoother bar.

If the mixture seems too soft, add a little more crushed cookies; if too dry, add a touch more melted butter.

For a stronger sugar-cookie flavor, increase the almond extract slightly.

These bars store well in the refrigerator for up to 5 days or can be frozen for longer storage.

Press firmly when spreading the base layer so the bars hold together cleanly when cut.
