Pastina Soup Recipe

Ingredients:
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups chicken broth (or vegetable broth)
1/2 cup pastina pasta (small pasta like acini di pepe or ditalini)
1/4 teaspoon dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped (optional for garnish)
1/4 cup grated Parmesan cheese (optional for garnish)
Directions:
Heat olive oil in a medium pot over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Pour in the chicken broth and bring it to a boil. Add the pastina pasta, dried thyme, salt, and pepper.
Reduce the heat and simmer for 6-8 minutes, or until the pasta is tender and the broth has thickened slightly.
Taste and adjust the seasoning if necessary.
Serve the soup hot, garnished with fresh parsley and a sprinkle of grated Parmesan cheese if desired.
