Crispy Honey Garlic Chicken with Rice and Veggies

A crave-worthy dinner bowl featuring crunchy chicken bites coated in a sticky honey garlic glaze, fluffy rice, and stir-fried veggies.

Ingredients:

For the Crispy Chicken:
1 lb boneless chicken thighs or breasts, cut into bite-sized pieces
1/2 cup cornstarch
1/2 cup all-purpose flour
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
2 eggs, beaten
Oil for frying
For the Honey Garlic Sauce:
1/4 cup soy sauce
1/4 cup honey
2 tbsp brown sugar
2 tbsp rice vinegar
4 cloves garlic, minced
1 tbsp cornstarch + 2 tbsp water (slurry)
For the Bowl:
2 cups cooked jasmine or basmati rice
1 cup bell peppers, sliced (red + green)
1/2 cup shredded carrots
1/2 cup snow peas or green beans
1 tbsp sesame oil or olive oil
Optional: sesame seeds, green onions for garnish

Instructions :

  1. Prepare the chicken:
    In a bowl, mix flour, cornstarch, garlic powder, salt, and pepper. Dip chicken in beaten eggs, then dredge in the dry mix.
  2. Fry until golden:
    Heat oil to 350°F (175°C). Fry chicken in batches for 4–5 minutes or until crispy and cooked through. Drain on paper towel.
  3. Make the sauce:
    In a saucepan, combine soy sauce, honey, sugar, vinegar, and garlic. Simmer for 2–3 minutes, then add cornstarch slurry. Stir until thick and glossy. Toss fried chicken in sauce.
  4. Sauté the veggies:
    In a skillet, heat sesame oil. Add all veggies and stir-fry for 2–3 minutes until crisp-tender.
  5. Assemble bowls:
    Spoon rice into bowl, top with glazed chicken and veggies. Sprinkle with sesame seeds or chopped green onion if desired.
