๐Ÿ›’ Ingredients

4โ€“5 medium russet potatoes, peeled and diced

1 lb cooked bacon, crumbled

1 medium onion, diced

3 cups chicken broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 block (8 oz) cream cheese, softened

1 cup heavy cream (or milk for lighter option)

1 tsp garlic powder

1 tsp onion powder

ยฝ tsp paprika

Salt & pepper to taste

Optional topping: sour cream, extra cheese, green onions, bacon bits

๐Ÿฒ Instructions

Prep the base:
Add the diced potatoes, onion, garlic powder, onion powder, paprika, salt, and pepper into your slow cooker.

Add the broth:
Pour in the chicken broth and gently mix.

Cook low & slow:
Cook on LOW for 6โ€“7 hours or HIGH for 3โ€“4 hours, until the potatoes are fork-tender.

Make it creamy:
Add the cream cheese, heavy cream, cheddar, and mozzarella. Stir well until everything melts and becomes creamy.
Tip: Mash a few potatoes in the pot to thicken the soup naturally!

Add the bacon:
Stir in most of the cooked bacon, saving some for topping.

Serve & enjoy:
Ladle into bowls and garnish with green onions, more cheese, and extra bacon for the perfect finish.
