🛒 Ingredients
- 2–3 chicken breasts, sliced
- 1 tbsp olive oil
- Salt & pepper, to taste
- 1 tsp Italian seasoning
- 1 cup cottage cheese
- ½ cup grated parmesan
- ½ cup chicken broth
- 4 cloves garlic, minced
- 1 tsp onion powder
- ½ tsp paprika
- 1 tbsp butter
- Fresh parsley for garnish
- Optional: a handful of spinach or sun-dried tomatoes
🍳 Instructions
1️⃣ Sear the Chicken
- Heat olive oil in a skillet.
- Season the chicken with salt, pepper, and Italian seasoning.
- Cook until golden on both sides, about 5–6 minutes.
- Remove and set aside.
2️⃣ Make the Creamy Sauce
- In the same skillet, melt the butter.
- Add garlic and sauté until fragrant.
- Blend cottage cheese, parmesan, and broth until smooth.
- Pour the mixture into the skillet.
- Add onion powder and paprika.
- Stir and simmer for 2–3 minutes until creamy.
3️⃣ Combine & Simmer
- Add the chicken back into the sauce.
- Simmer for 5–7 minutes, until the chicken is cooked through and coated.
- Optional: Stir in spinach or sun-dried tomatoes for holiday color.
