Beef & Avocado Bowls
Ingredients (for 4 servings)
1 lb (450 g) ground beef (80/20 or leaner if preferred)
2 medium avocados, sliced
2 cups broccoli rice (raw or lightly steamed)
1 cup cottage cheese (full-fat or low-fat based on preference)
2–3 tbsp sugar-free sriracha mayo (like the one in the image — G Hughes Sugar-Free Sriracha Mayo)
1 tbsp olive oil or butter (for cooking the beef)
Salt, pepper, and garlic powder (to taste)
Optional toppings: sesame seeds or hemp seeds for texture
Instructions
Cook the Ground Beef
Heat oil or butter in a skillet over medium heat.
Add ground beef and cook until browned (about 6–8 minutes).
Season with salt, pepper, and garlic powder.
Prepare the Base
Steam or lightly sauté the broccoli rice until tender (2–4 minutes).
Divide evenly into four meal prep bowls.
Assemble the Bowls
Add a scoop of cottage cheese to each bowl.
Top with equal portions of cooked beef.
Arrange avocado slices on top.
Drizzle & Finish
Drizzle sugar-free sriracha mayo over each bowl.
Sprinkle sesame or hemp seeds for garnish.
