Ingredients:
2⅔ cups all-purpose flour
1½ tsp pumpkin pie spice
¼ tsp fine sea salt
1 cup unsalted butter
1¼ cups light brown sugar (divided)
30 oz pumpkin pie mix
2 large eggs, beaten
2 cups confectioners’ sugar
½ cup rolled oats
Pinch of fine sea salt
5 tbsp unsalted butter
2–3 tbsp whole milk
1½ tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
- Mix flour, pumpkin spice, and salt. Cut in 1 cup butter and 1 cup brown sugar until crumbly. Press half into the pan.
- In another bowl, mix pumpkin pie mix with eggs. Pour over crust.
- Combine remaining crumb mixture with oats, remaining sugar, and pinch of salt. Sprinkle on top.
- Bake 35–40 minutes until golden. Cool.
- For glaze, whisk powdered sugar, butter, milk, and vanilla until smooth. Drizzle over cooled bars.
