Pumpkin Streusel Bars

Ingredients:

2⅔ cups all-purpose flour

1½ tsp pumpkin pie spice

¼ tsp fine sea salt

1 cup unsalted butter

1¼ cups light brown sugar (divided)

30 oz pumpkin pie mix

2 large eggs, beaten

2 cups confectioners’ sugar

½ cup rolled oats

Pinch of fine sea salt

5 tbsp unsalted butter

2–3 tbsp whole milk

1½ tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
  2. Mix flour, pumpkin spice, and salt. Cut in 1 cup butter and 1 cup brown sugar until crumbly. Press half into the pan.
  3. In another bowl, mix pumpkin pie mix with eggs. Pour over crust.
  4. Combine remaining crumb mixture with oats, remaining sugar, and pinch of salt. Sprinkle on top.
  5. Bake 35–40 minutes until golden. Cool.
  6. For glaze, whisk powdered sugar, butter, milk, and vanilla until smooth. Drizzle over cooled bars.
