Pumpkin Cheesecake Bars

Ingredients:

15 cinnamon graham crackers

3 tbsp granulated sugar

½ cup salted butter, melted

1 cup pumpkin puree

1½ tsp pumpkin pie spice

16 oz cream cheese

1 cup confectioners’ sugar (heaping)

½ cup sour cream

1½ tsp vanilla extract

3 large eggs

Whipped topping

Instructions:

Slice into bars and top with whipped cream.

Preheat oven to 325°F (160°C). Crush graham crackers and mix with sugar and melted butter. Press into a 9×13-inch pan.

Beat cream cheese, sugar, and sour cream until smooth. Add eggs one at a time, then vanilla.

Stir in pumpkin puree and pumpkin spice. Pour over crust.

Bake 40–45 minutes until set. Cool completely, then refrigerate for at least 3 hours.
