A quick, cozy pasta made with pantry staples and frozen vegetables. Warm, simple, and satisfying—perfect for busy weeknights when you need comfort fast.

Ingredients

8 oz pasta (penne, fusilli, or any shape)

1 can (14 oz) diced tomatoes, with juice

1 tablespoon olive oil

2 cloves garlic, minced

1 cup frozen peas or mixed vegetables

Salt, to taste

Black pepper, to taste

Optional Toppings

Grated Parmesan cheese

Fresh basil leaves

Red pepper flakes

Instructions

Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.

Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 1 minute, just until fragrant.

Add diced tomatoes with their juice. Simmer for 2–3 minutes.

Stir in frozen vegetables, cover, and cook 3–4 minutes until heated through.

Add cooked pasta to the skillet and toss to coat evenly. Season with salt and black pepper.

Serve warm with Parmesan, basil, and red pepper flakes if desir
