🧀🌮 Cheesy Taco Potatoes 🥔
Seasoned beef, tender potatoes, and melted cheese in one skillet

🛒 Ingredients
1 lb lean ground beef
4–6 medium Russet potatoes, peeled & diced
1 packet (1 oz) taco seasoning
½ cup water
1 tbsp olive oil
1 cup shredded cheddar or Mexican-blend cheese
Salt & pepper (to taste)
Optional Toppings
Sour cream
Chopped green onions
Diced tomatoes
Jalapeños
Fresh cilantro
👩‍🍳 Instructions
1️⃣ Cook the Beef
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned.
Drain excess fat if needed.
2️⃣ Season
Stir in taco seasoning and ½ cup water.
Simmer for 2–3 minutes until thickened.
3️⃣ Cook the Potatoes
Add diced potatoes to the skillet.
Season lightly with salt & pepper.
Cover and cook on medium-low for 20–25 minutes, stirring occasionally, until potatoes are fork-tender.
(Add a splash of water if needed to prevent sticking.)
4️⃣ Add the Cheese
Sprinkle cheese evenly over the top.
Cover and cook 2–3 minutes until melted and gooey.
5️⃣ Serve
Top with your favorite toppings and enjoy hot 😋
💡 Variations
🔥 Spicy: add hot sauce or chili flakes
🌽 Add corn or black beans
🥓 Add cooked bacon
🍗 Swap beef for ground chicken or turkey
