Cherry Chocolate Shortbread Cookies
Buttery shortbread cookies filled with sweet maraschino cherries and rich chocolate chips—perfect for holidays or gift boxes.
Ingredients (Yields about 24 cookies)
1 cup unsalted butter, room temperature
½ cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
¼ teaspoon salt
½ cup maraschino cherries, finely chopped and well drained
½ cup chocolate chips (semi-sweet or dark)
Instructions
1️⃣ Preheat the Oven
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
2️⃣ Make the Dough
In a large bowl, beat the butter and powdered sugar until light and creamy.
Mix in vanilla extract.
Gradually add flour and salt, mixing until a soft dough forms.
3️⃣ Add Cherries & Chocolate
Gently fold in chopped cherries and chocolate chips.
4️⃣ Shape the Cookies
Scoop about 1 tablespoon of dough and roll into balls.
Place on the baking sheet and slightly flatten with your fingers or a fork.
5️⃣ Bake
Bake for 12–15 minutes, until the edges are lightly golden.
6️⃣ Cool
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
