Apple & Blueberry Yogurt Cake
Ingredients
1 cup plain Greek yogurt
3 large eggs
¾ cup granulated sugar
½ cup vegetable oil
1½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon vanilla extract (optional)
1 apple, peeled and diced
1 cup blueberries (fresh or frozen)
Pinch of salt
Optional: powdered sugar for dusting
Instructions
1️⃣ Preheat & Prepare Pan
Preheat oven to 350°F (175°C).
Grease and flour a 9-inch round cake pan or loaf pan.
2️⃣ Mix Wet Ingredients
In a large bowl, whisk yogurt, eggs, and sugar until smooth.
Add oil and vanilla extract; mix well.
3️⃣ Mix Dry Ingredients
In another bowl, combine flour, baking powder, and salt.
4️⃣ Combine
Gradually add dry ingredients to wet ingredients, mixing just until combined.
5️⃣ Add Fruit
Gently fold in diced apple and blueberries.
6️⃣ Bake
Pour batter into prepared pan.
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
7️⃣ Cool & Serve
Let cake cool for 10 minutes before removing from the pan.
Dust with powdered sugar if desired.
