Slow Cooker Beef Bourguignon
Ingredients
2 lbs beef chuck, cut into large chunks
4 slices bacon, chopped
1 cup pearl onions (or 1 small onion, diced)
3 cloves garlic, minced
2 carrots, sliced
1 lb baby potatoes, halved
2 cups red wine (Burgundy or Pinot Noir)
1 cup beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon thyme
1 teaspoon rosemary
1 bay leaf
8 oz mushrooms, sliced
2 tablespoons flour
Salt and black pepper, to taste
Instructions
1️⃣ Brown the Bacon & Beef (Recommended)
In a skillet over medium heat, cook bacon until crisp. Transfer to the slow cooker.
Season beef with salt and pepper, then lightly coat with flour.
Brown beef in the bacon fat in batches until seared. Add to slow cooker.
2️⃣ Add Vegetables & Aromatics
Add pearl onions, garlic, carrots, potatoes, and mushrooms to the slow cooker.
3️⃣ Make the Sauce
In a bowl, whisk together red wine, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
Pour over the beef and vegetables.
4️⃣ Slow Cook
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is fork-tender.
5️⃣ Finish & Adjust
Remove bay leaf.
Taste and adjust salt and pepper.
If sauce needs thickening, cook uncovered on HIGH for 20–30 minutes.
