Crispy Balsamic Thyme Potato Torte 🥔🌿
Ingredients
1.2 kg (about 2½ lb) potatoes (Yukon Gold or white potatoes)
¼ cup olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, finely grated
2 teaspoons fresh thyme leaves
1 teaspoon salt
Black pepper, to taste (optional)
Instructions
1️⃣ Prep the Oven & Pan
Preheat oven to 400°F (200°C).
Lightly oil a round baking dish or springform pan.
2️⃣ Slice the Potatoes
Peel the potatoes if desired.
Slice very thinly using a mandoline or sharp knife.
3️⃣ Season the Potatoes
In a large bowl, whisk together olive oil, balsamic vinegar, grated garlic, thyme, salt, and black pepper.
Add the potato slices and toss until evenly coated.
4️⃣ Assemble the Torte
Layer the potatoes tightly in the prepared pan, stacking them neatly for a compact torte.
Press down firmly to pack the layers.
5️⃣ Bake Covered
Cover the pan tightly with foil.
Bake for 40 minutes.
6️⃣ Bake Uncovered & Crisp
Remove foil and continue baking for 25–30 minutes, until the top is deeply golden and crispy and the potatoes are tender.
7️⃣ Rest & Serve
Let the torte rest for 10 minutes before slicing.
Carefully invert or slice directly from the pan.
